Next up from our intern introductions is Declan!

You may already recognise him from earlier this year behind our stand at All In Beer Fest 2021, or seen him at the Tap Room after work. If you’re a Majorna local, you’ve most likely seen Declan at his favourite place Hermanos TacoKiosk  🌮 🍺 

Declan brewed his own Session IPA with coriander and orange during his time with us, which will be released Hermanos TacoKiosk  on Wednesday 23 March 5-9PM. The perfect beer to pair with tacos, right?

Declan is from Uttoxeter, West Midlands of England (hence his love for Marmite). Like a lot of us here, he moved to Gothenburg for love. In return, Gothenburg led Declan to his love of Craft Beer and his interest in brewing. Before helping out in our brewery, Declan toured the world as a Sound Engineer. That’s one of the many reasons why we think he is the coolest. 

 

  • Hej Declan, what’s your top 3 bands you have toured with?

Tool, The Who and LCD Sound System.

  • What was your beverage of choice before moving to Sweden?

Cask Ale in England or some macro beer. In fact, A moment of Clarity is what got me hooked on Craft Beer. It’s still my go-to beer.

  • How did you find brewing your beer?

It definitely confirmed a lot I had learned after shadowing the brewers and being hands on on the brewery. It was good to go from designing the recipe to putting it into kegs myself.

  • Can you tell us about your beer?

After spending much of my formative years drinking to get drunk, I now enjoy having a beer that I can sit on the sofa with and just enjoy the taste. When I first moved to Sweden in 2017, I took my first look inside a Systembolaget and saw all of these craft IPAs (something that I wouldn’t have seen as much of in the UK outside of a specialist bottle shop). One of the first cans that I bought here was Beerbliotek’s “A moment of Clarity”. This beer quickly became my favourite, and through this I began to appreciate the flavour of a beer instead of the ABV.

I chose to brew a Session IPA inspired by two beers: Beerblitoek A moment of Clarity and Einstök Icelandic White Ale. The aspect of the Einstök that I drew from was the use of coriander seeds and orange peel. I feel these ingredients compliment the other aspects of the beer by giving it a light tanginess and aftertaste. I’ve been informed that Beerbliotek actually brewed an IPA with coriander and orange peel at 7.5% called Square peg, round hole. After tasting that beer, I decided a sessionable version would be nice. It will be my first creation and it is not my intention to reinvent the wheel, but to create a beer to chill out with on a Friday night.
